DUMBO House is welcoming a fresh addition to New York’s dining scene to its two-floor home between the Manhattan and Brooklyn Bridges: our contemporary steakhouse experience, Cardón Tavern.

An original Soho House concept, Cardón is rooted in generous plates, flowing drinks, and easy-going hospitality, bringing you all that’s best about the classic steakhouse, and reimagining it within the relaxed spirit of a neighbourhood tavern.'

The restaurant takes its name and inspiration from the cactus native to Baja California, connecting DUMBO House with its future sister restaurant at Soho Beach House Los Cabos, which is set to open soon. In Brooklyn – its first outing in the US – the concept takes on a distinctly New York character, combining the warmth of a tavern with the energy of the city. Subtle nods to Los Cabos run through the drinks menu, bringing a taste of the beach house to DUMBO.

The menu is grounded in steakhouse and tavern favourites, beginning with New England Crab Cake, Steak Tartare prepared tableside, fresh East and West Coast oysters, and Shrimp Cocktail with horseradish. Hand-selected steaks – including a wagyu tomahawk presented tableside – lead the main event, alongside whole fish and lobster, and a chicken stuffed with truffle. Classic sides include Creamed Spinach, French Fries and Charred Broccolini to share with the table or enjoy solo.

Desserts put a similarly Cardón spin on American classics, with the Cardón Sundae and Chocolate Soufflé – served with warm chocolate sauce and vanilla ice cream – alongside Apple Crumble and, of course, New York Cheesecake.

While food may be a major draw, Cardón’s drinks offering is just as central to the experience. A dedicated Martini selection showcases tried-and-tested serves alongside an extra-dry House Martini, and – in a nod to the tavern’s soon-to-come Mexican home – the Los Cabos-inspired Dirty Agave Martini, which is crafted with Patrón Reposado and tomolive brine. New York favourites meet Baja-inspired cocktails elsewhere on the list, too, from a classic Manhattan and Cosmopolitan, to the mezcal-led San Luis Swizzle and a Cobbler made with Patrón Añejo tequila.

It’s not all about cocktails, good as they are: the wide-ranging, sommelier-curated wine list sits alongside a select range of draught beers, from local Brooklyn taps to that tavern essential: the Guinness stout.

Altogether, Cardón showcases the skill of our culinary talent across the Americas – including Adam Crocini, Mark Murphy, Joshua Brown, Jonathan Benno, and Javier Salgado – whose skills and passions highlight our commitment to delivering new experiences to members and guests.

Cardón Tavern officially opens at DUMBO House on Tuesday 27 October, serving dinner Tuesday to Saturday from 5.30pm to 10.30pm. Bookings can be made via the Soho House app.
